Vegan Peach Popsicles!
This is a simple, 4 ingredient recipe that makes a delicious and creamy popsicle with an extremely peachy flavor. It is also a perfect summer evening treat, and it's really easy to make, so you can have a healthy yummy treat without having to bake anything.

Servings: 6 popsicles
- 3 cups fresh or frozen peaches (or a combination of the two), pitted (and peeled if you want)
- 3-4 tbsp maple syrup
- 1/3 cup coconut milk
- 1 cup non-dairy milk
Combine all ingredients in a blender.
Blend on very low speed for a few seconds, then increase speed, blend a bit more, and keep increasing until the "smoothie" is completely free of chunks.
Prepare popsicle molds. If you don't have any, you could use cups with popsicle sticks in them or silicone muffin tins/cups, and pour the mixture in. If you have any extra, you can drink it like a smoothie or make a makeshift extra popsicle.
Put popsicles in the freezer for 6 hours to overnight.
When they are done, you can pour hot water over the popsicle molds to help get them out, and then enjoy!
