Vegan Peach Popsicles!

This is a simple, 4 ingredient recipe that makes a delicious and creamy popsicle with an extremely peachy flavor. It is also a perfect summer evening treat, and it's really easy to make, so you can have a healthy yummy treat without having to bake anything.

Ingredients

  • 3 cups fresh or frozen peaches (or a combination of the two), pitted (and peeled if you want)
  • 3-4 tbsp maple syrup
  • 1/3 cup coconut milk
  • 1 cup non-dairy milk

Instructions

  • Combine all ingredients in a blender.
  • Blend on very low speed for a few seconds, then increase speed, blend a bit more, and keep increasing until the "smoothie" is completely free of chunks.
  • Prepare popsicle molds. If you don't have any, you could use cups with popsicle sticks in them or silicone muffin tins/cups, and pour the mixture in. If you have any extra, you can drink it like a smoothie or make a makeshift extra popsicle.
  • Put popsicles in the freezer for 6 hours to overnight.
  • When they are done, you can pour hot water over the popsicle molds to help get them out, and then enjoy!
